Steps
- 1
In a bowl, combine the full-fat Greek yogurt, mayonnaise, lemon juice, freshly grated garlic, garlic powder, smoked paprika, dried oregano, dried basil, cumin, coriander, salt, and olive oil for the chicken marinade.
- 2
Add the halved chicken breasts to the marinade and coat them thoroughly. Cover the bowl and refrigerate for at least 2–4 hours, preferably overnight.
- 3
Heat a grill pan or skillet over medium-low heat.
- 4
Place the marinated chicken in the hot pan and cook for 5–7 minutes on each side, until fully cooked.
- 5
Increase the heat briefly to char the chicken.
- 6
Let the cooked chicken rest for 5 minutes, then slice it into strips.
- 7
In another bowl, combine the finely diced red onion, cucumber, deseeded diced tomatoes, and diced olives.
- 8
Season the Greek salad with salt, black pepper, olive oil, and lemon juice.
- 9
If using feta cheese, add it to the salad and toss gently.
- 10
In a bowl, mix the whole-milk Greek yogurt, extra-virgin olive oil, lemon juice, freshly grated garlic, chopped dill, chopped parsley, and salt for the tzatziki sauce.
- 11
Add the grated, well-drained cucumber to the yogurt mixture and stir. Chill the tzatziki until ready to use.
- 12
Warm the tortillas in a pan or microwave.
- 13
Layer each tortilla with lettuce, sliced chicken, Greek salad, and tzatziki sauce.
- 14
Wrap the tortillas tightly and serve immediately.
