Youtiao Tofu Cheesecake
A creative dessert inspired by the iconic Chinese breakfast of soy milk and fried dough sticks. This no-bake cheesecake features a crispy youtiao base topped with a silky, soy-forward tofu cream cheese layer.

Ingredients
- 3 youtiao (Chinese fried dough sticks)
- 300 g cream cheese
- 300 g silken tofu
- 70 g sugar
- 120 g heavy cream
- 75 ml soy milk
- 12 g gelatine powder
- 60 ml hot water (for blooming the gelatine)
- salt (a pinch)

Preheat your oven to 160°C (320°F).

Cut the youtiao into bite-sized pieces and bake them for 10 minutes at 160°C to dry them out slightly; this prevents them from becoming overly soggy when the cake is chilled.

In a small bowl, combine the gelatine powder with 60ml of hot water. Stir well to bloom and completely melt the gelatine.

In a blender, combine the cream cheese, silken tofu, sugar, heavy cream, soy milk, and a pinch of salt.

Add the melted gelatine mixture to the blender and blend all ingredients until the batter is completely smooth and silky.

Arrange the baked youtiao pieces into the bottom of a cake tin or mold to form a base layer.

Pour the cheesecake batter over the youtiao base.

Place the cake in the refrigerator and let it chill and set overnight.

Once set, slice and serve.
Notes
Baking the youtiao is a critical step to ensure they maintain some texture against the moisture of the cheesecake. The recipe is adapted from @broccoliraab.
