Ingredients
- 1 tbsp bacon (diced; reserve for garnish)
- 3 tbsp unsalted butter
- 1 sweet onion (diced)
- 3 carrots (peeled and sliced)
- 2 celery ribs (diced)
- 3 garlic cloves (minced)
- 2 tsp Italian seasoning
- 0.25 cup all-purpose flour
- 0.333 cup dry white wine
- 4 cup chicken stock
- 1 bay leaf
- Kosher salt (to taste; season twice as directed)
- black pepper (freshly ground, to taste; season twice as directed)
- 3 cup leftover shredded rotisserie chicken
- 9 oz gnocchi (1 package)
- 3 cup baby spinach (chopped)
- 0.25 cup heavy cream
- 2 tbsp red wine vinegar
- 2 tbsp fresh parsley leaves (chopped)
Steps
- 1
Heat a large stockpot or Dutch oven over medium-high heat. Add the diced bacon and cook until brown and crispy, about 6–8 minutes. Transfer it to a paper towel-lined plate. Drain excess fat from the pot, reserving 1 tablespoon in the pot, and set the bacon aside for garnish.
- 2
Reduce the heat to medium. Add the butter to the stockpot and stir until melted, about 1–2 minutes.
- 3
Add the diced onion, sliced carrots, and diced celery. Cook, stirring occasionally, until tender, about 3–4 minutes.
- 4
Stir in the minced garlic and Italian seasoning until fragrant, about 1 minute.
- 5
Whisk in the flour and cook until lightly browned, about 1 minute.
- 6
Stir in the white wine, scraping any browned bits from the bottom of the pot.
- 7
Stir in the chicken stock and bay leaf. Season with kosher salt and freshly ground black pepper to taste. Bring to a boil, then reduce the heat and simmer, covered, until the flavors have blended, about 10 minutes.
- 8
Stir in the shredded chicken and gnocchi. Cook until the gnocchi is tender, about 5 minutes.
- 9
Stir in the chopped spinach, heavy cream, red wine vinegar, and parsley. Cook until the spinach has wilted, about 2–3 minutes. Season with salt and pepper to taste.
- 10
Serve immediately, garnished with the reserved crispy bacon.
