Broccoli Cheddar Soup

Ingredients
- 1 onion (diced)
- 5 garlic cloves (minced)
- 1 shallot (minced)
- 3 carrots (shredded)
- 6 oz bacon (cut into small pieces)
- 4 cup chicken broth
- 2 cup whole milk
- 1.5 cup heavy cream
- 4 cup broccoli florets (chopped)
- 3 cup cheddar cheese (shredded)
- 2 tsp dried thyme
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp cayenne pepper (optional)
- 1 tsp smoked paprika
- 0.25 tsp nutmeg
- salt and pepper (to taste)
- 0.333 cup all purpose flour
- 3 tbsp butter

In a large pot on medium high heat add bacon and cook until done.

Remove the cooked bacon from the pot and set aside.

In the remaining bacon grease, add the diced onion and diced shallots.

Cook the onion and shallots until they become translucent, about 3-4 minutes.

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Add the butter and flour to the pot.

Mix until well combined to form a roux.

Pour in the chicken broth and stir until combined.

Add the shredded carrots and chopped broccoli florets.

Cover the pot and cook for about 15 minutes until the vegetables are tender.

Pour in the milk and heavy cream, and mix until well combined.

Add the seasonings (thyme, garlic powder, onion powder, cayenne pepper, smoked paprika, nutmeg, salt, and pepper) and mix again until fully combined.
