Ingredients
- 1.5 lb shrimp (peeled, deveined, and tails removed)
- 1 tbsp olive oil (for shrimp marinade; plus extra drizzle for pan)
- 0.5 tsp smoked paprika
- 0.5 tsp paprika
- 0.5 tsp cumin
- 0.5 tsp chili powder
- 0.5 tsp salt (for shrimp)
- 1 tbsp honey (for shrimp marinade)
- 1 lime zest (zest of 1 lime)
- 1 can black beans (drained and rinsed)
- 1 avocado (large, diced)
- 0.25 cup red onion (diced)
- 1 jalapeño (thinly sliced, seeds removed for less spice)
- 0.5 cup cilantro (chopped)
- 1 cup cherry tomatoes (chopped; or grape tomatoes)
- 0.5 orange juice (juice of 1/2 an orange)
- 1 lime juice (juice of 1 lime)
- 0.25 cup olive oil (for dressing)
- 2 tbsp champagne vinegar
- 1 clove garlic (minced)
- 1 tbsp honey (for dressing)
- 0.25 tsp salt (for dressing)
- black pepper (a few grinds)

In a bowl, toss the peeled and deveined shrimp with 1 tablespoon of olive oil, 1/2 teaspoon salt, smoked paprika, paprika, cumin, chili powder, 1 tablespoon honey, and the lime zest. Mix well to ensure the shrimp are evenly coated.

Heat a drizzle of olive oil in a large nonstick skillet over medium heat.

Add the shrimp to the skillet in a single layer, including any marinade remaining in the bowl. Cook for 2 minutes on each side until pink and opaque.

Remove the shrimp from the heat and allow them to cool for 2-3 minutes.

While the shrimp are cooking and cooling, prepare the dressing by whisking together the orange juice, lime juice, 1/4 cup olive oil, champagne vinegar, minced garlic, 1 tablespoon honey, 1/4 teaspoon salt, and black pepper in a small bowl or jar.

In a large salad bowl, combine the black beans, diced avocado, red onion, sliced jalapeño, chopped cilantro, and chopped tomatoes.

Add the cooked shrimp to the bowl with the vegetables.

Pour the citrus dressing over the salad and toss well to combine.

Taste and add additional salt if preferred. Serve immediately or store in the refrigerator for meal prep.
Notes
This salad is excellent for meal prep as it holds up well and the flavors intensify by the next day. If you prefer less heat, ensure all seeds and ribs are removed from the jalapeño.
