Ingredients

  • 1 lb Beef (Flank, skirt, flap meat or skirt steak)
  • 0.75 cup Vegetable oil (For the marinade)
  • 1 Lime (Juiced, for the marinade)
  • 1 Orange (Juiced, for the marinade)
  • 3 Garlic (Cloves, for the marinade)
  • Jalapeños (To taste, for the marinade)
  • 0.5 tsp Cumin
  • 0.5 tsp Smoked paprika
  • 0.5 tsp Oregano
  • 0.5 tsp Salt (For the marinade)
  • 3 Tomatillos (For the salsa)
  • 1 Serrano pepper (For the salsa)
  • 0.25 Avocado (For the salsa)
  • 2 tbsp White onion (Chopped, for the salsa)
  • 1 Garlic (Clove, for the salsa)
  • 2 Limes (Juiced, for the salsa)
  • 0.25 cup Cilantro (For the salsa)
  • 2 tbsp Vegetable oil (For the salsa)
  • Salt and pepper (To taste, for the salsa)
  • 8 Corn tortillas (2 per taco)
  • 1 cup Mozzarella cheese (Shredded)
  • Onion (Chopped, for serving)
  • Cilantro (Chopped, for serving)
  • Lime (Sliced into wedges, for serving)

Steps

    In a large bowl, whisk together the vegetable oil, the juice of one lime, the juice of one orange, 3 minced garlic cloves, jalapeños to taste, cumin, smoked paprika, oregano, and salt to create the marinade.

    Place the meat (flank, skirt, or flap meat) in the marinade and ensure it is well coated. Let it marinate in the refrigerator for 2 to 8 hours.

    To prepare the green salsa, place the tomatillos, serrano pepper, avocado, chopped white onion, garlic clove, juice of two limes, cilantro, vegetable oil, salt, and pepper in a blender.

    Blend all the salsa ingredients until the mixture is smooth and homogeneous.

    Cook the marinated meat on a grill or in a hot skillet until it reaches the desired level of doneness. Let it rest for a few minutes and then cut it into small pieces.

    To assemble the quesa-tacos, place a corn tortilla on a hot griddle or skillet, add a layer of mozzarella cheese, and place another tortilla on top.

    Heat until the cheese is melted and the tortillas are lightly browned.

    Open the cheese-filled tortillas and fill them with the chopped carne asada.

    Serve the tacos accompanied by the green salsa, chopped onion, fresh cilantro, and lime wedges.
