A high-protein, low-carb alternative to the classic peanut butter egg, using Greek yogurt and PB powder for a creamy filling coated in sugar-free chocolate.

Ingredients

  • 0.5 cup Greek yogurt (0% fat)
  • 0.33 cup Monkfruit sweetener
  • 1.5 scoops protein powder (vanilla or chocolate recommended)
  • 1 cup PB powder (powdered peanut butter)
  • salt (pinch)
  • 3 tbsp Premier Protein shake (to reach filling consistency)
  • 0.33 cup sugar-free chocolate chips
  • 2 tsp oil (coconut oil or neutral oil)

Steps

    In a medium mixing bowl, combine the Greek yogurt, monkfruit sweetener, protein powder, PB powder, and a pinch of salt.

    Add the Premier Protein shake one tablespoon at a time, mixing thoroughly between additions, until the mixture reaches a thick, dough-like consistency that can be shaped.

    Divide the dough into 6 equal portions and shape each into an egg-like oval. Place them on a tray lined with parchment paper.

    Place the shaped eggs in the freezer for about 20-30 minutes to firm up before coating.

    In a small microwave-safe bowl, combine the sugar-free chocolate chips and oil. Microwave in 20-second intervals, stirring in between, until the chocolate is completely smooth.

    Dip each chilled egg into the melted chocolate, ensuring it is fully coated. Return the eggs to the parchment-lined tray.

    Place the eggs back in the refrigerator or freezer until the chocolate coating has fully set.

Notes

To ensure the best texture, add the liquid protein shake slowly; you may need slightly more or less than 3 tbsp depending on the brand of protein powder used. Store in the refrigerator.
