Ingredients

  • 50 g oat flour
  • 10 g cocoa powder
  • 25 g chocolate vegan protein powder
  • 100 g Greek yoghurt
  • 5 g chia seeds
  • 100 ml milk or water
  • 20 g dark chocolate (sugar free recommended; up to 25g)
  • peanut butter (one dollop for the top plus more for swirling)

Steps

  1. 1

In a bowl or jar, combine the oat flour, cocoa powder, chocolate protein powder, Greek yoghurt, chia seeds, and milk or water.

  2. 2

Mix thoroughly until well combined and place in the fridge to thicken for 2 to 4 hours.

  3. 3

Once the oats have thickened, add a dollop of peanut butter to the center of the top.

  4. 4

Melt the dark chocolate in the microwave or over a double boiler.

  5. 5

Drizzle the melted chocolate over the oats to form a shell, then swirl in additional peanut butter for the topping.

  6. 6

Place the bowl back in the fridge until the chocolate shell is set, or leave overnight before enjoying.

Notes

The author suggests using sugar-free dark chocolate for the topping. Total time includes the minimum 4-hour chilling period.
