Ingredients

  • 2 Weetabix
  • 15 g Vegan vanilla protein powder (Marked with an asterisk in the source; the creator used Prozis protein powder.)
  • 1 tsp Lemon juice
  • 90 ml Milk (Milk of choice; the creator used oat milk.)
  • 0.5 tsp Lemon zest (For the Weetabix base.)
  • 150 g Lemon-flavored Greek yoghurt (Alternatively, use vanilla Greek yoghurt with 1 tbsp lemon juice.)
  • 0.5 tsp Lemon zest (For the cheesecake layer.)
  • 20 g White chocolate (The creator used sugar-free white chocolate; marked with an asterisk in the source.)
  • Lemon curd (Use spoonfuls, added in blobs on top.)

Steps

  1. 1

Combine the two Weetabix, vegan vanilla protein powder, 1 teaspoon lemon juice, 90 ml milk, and 1/2 teaspoon lemon zest. Use less milk if you prefer a crunchier base.

  2. 2

Press the Weetabix mixture into the bottom of a bowl.

  3. 3

Mix the lemon-flavored Greek yoghurt with the remaining 1/2 teaspoon lemon zest. If using vanilla Greek yoghurt instead, mix it with 1 tablespoon lemon juice as specified in the ingredient note.

  4. 4

Spread the cheesecake mixture evenly over the Weetabix base.

  5. 5

Melt the white chocolate in the microwave.

  6. 6

Drizzle the melted white chocolate over the cheesecake layer to form a shell.

  7. 7

Add spoonfuls of lemon curd in blobs over the chocolate. Swirl the curd through the topping using a cocktail stick.

  8. 8

    Refrigerate overnight, then enjoy.

Notes

The source does not specify an exact amount of lemon curd or a microwave power/time for melting the chocolate. Refrigeration is overnight. The alternative cheesecake layer uses vanilla Greek yoghurt plus 1 tablespoon lemon juice.
