Ingredients
- 0.5 cup unsalted butter (softened)
- 0.5 cup light brown sugar
- 0.25 cup granulated sugar
- 1 large egg (room temperature)
- 1 egg yolk (room temperature)
- 1 tbsp vanilla bean paste (The method refers to vanilla extract, but the ingredient list specifies vanilla bean paste.)
- 180 g all-purpose flour (spooned and leveled)
- 1 tsp cornstarch
- 1 tsp espresso powder (optional)
- 0.5 tsp baking soda
- 0.5 tsp flaky sea salt
- 1 cup mini semisweet chocolate chips (plus more for topping)
- mini semisweet chocolate chips (additional chocolate for topping)
- parchment paper (for lining the baking sheet)
Steps
- 1
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- 2
In a bowl, whisk together the all-purpose flour, cornstarch, optional espresso powder, baking soda, and flaky sea salt. Set the dry mixture aside.
- 3
In another bowl, add the softened butter. Mix in the brown sugar and granulated sugar.
- 4
Add the egg, egg yolk, and vanilla bean paste. Whisk for 1–2 minutes, until the mixture is smooth and forms a paste.
- 5
Gradually add the dry ingredients to the wet mixture. Gently fold with a spatula just until combined; do not overmix.
- 6
Fold in the mini semisweet chocolate chips, distributing them evenly throughout the dough.
- 7
Transfer all of the cookie dough to the prepared baking sheet. Press and flatten it evenly into a large rectangle about 1/2 inch thick, keeping the thickness uniform throughout.
- 8
Freeze the flattened dough until firm, about 20–30 minutes.
- 9
Once firm, use a sharp knife or bench scraper to cut the dough into long fry-shaped pieces.
- 10
Carefully separate the cookie fries slightly so they are not touching. Freeze them again for 30 minutes to help them hold their shape while baking.
- 11
Arrange no more than 4 cookie fries on a baking sheet, spacing them evenly. Add additional chocolate chips on top if desired.
- 12
Bake at 350°F for 13 minutes, or until the edges are lightly golden and the centers are set.
- 13
Let the cookie fries cool on the baking sheet, then cool completely before serving.
Notes
The source states 10 large cookie fries. The listed butter measurement is written as 1/2 cups but paired with 115 g; the metric amount has been retained exactly. The amount of extra chocolate for topping is not specified.
