Ingredients

  • 1 cup frozen blueberries (thawed slightly)
  • 0.5 cup unsalted butter (softened)
  • 0.75 cup granulated sugar
  • 2 cup all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup white chocolate chips

Steps

  1. 1

In a small saucepan over medium heat, cook the blueberries until they break down and release their juices. Continue simmering until the liquid reduces and thickens into a jam-like consistency. Let cool completely.

  2. 2

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  3. 3

Incorporate the cooled blueberry reduction into the butter mixture, mixing until the dough turns a vibrant purple color.

  4. 4

In a separate bowl, whisk together the flour, baking powder, and salt.

  5. 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

  6. 6

Fold in the white chocolate chips by hand.

  7. 7

Chill the dough in the refrigerator for at least 30 minutes to make it easier to handle.

  8. 8

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  9. 9

Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  10. 10

Bake for 10-12 minutes or until the edges are set. The centers may still look slightly soft.

  11. 11

Allow the cookies to cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely.

Notes

Using frozen blueberries that have been reduced on the stove provides the best color and flavor without making the dough too wet. Ensure the blueberry reduction is completely cool before adding to the butter to prevent melting.
