Ingredients

  • 360 g large ripe bananas (Mashed finely until smooth and not lumpy)
  • 1.333 cup all-purpose flour
  • 0.333 cup cocoa powder
  • 8 tbsp salted butter (Melted)
  • 1 large egg (Room temperature)
  • 0.333 cup sour cream or Greek yogurt (Room temperature)
  • 0.5 cup light brown sugar
  • 0.5 cup granulated sugar
  • 1 tbsp vanilla bean paste
  • 1 cup semi-sweet chocolate chips (Plus more for topping)
  • 1 tsp baking soda

Steps

  1. 1

Preheat the oven to 350°F (175°C).

  2. 2

In a mixing bowl, peel the bananas and mash them finely until smooth and not lumpy.

  3. 3

Add the melted salted butter, granulated sugar, and light brown sugar to the mashed bananas. Mix well for 2 minutes.

  4. 4

Crack in the room-temperature egg and whisk for an additional 2–3 minutes.

  5. 5

Add the sour cream or Greek yogurt and vanilla bean paste. Mix well, then set the wet mixture aside.

  6. 6

In a separate bowl, combine the all-purpose flour, baking soda, and cocoa powder. Mix until evenly combined.

  7. 7

Slowly add the dry mixture to the wet batter, mixing just until incorporated.

  8. 8

Add the semi-sweet chocolate chips and fold them into the batter just until combined. Do not overmix the bananas or batter at this point.

  9. 9

Line a loaf pan with parchment paper.

  10. 10

Pour the batter into the parchment-lined loaf pan and add extra chocolate chips on top if desired, as indicated in the ingredient list.

  11. 11

Bake for 1 hour, or until a toothpick inserted into the bread comes out clean.

  12. 12

Let the banana bread cool completely before serving.
