Ingredients

  • 125 g Brie (Cut into small cubes)
  • Baking paper (For lining the baking tray)
  • 500 g Turkey mince
  • 10 g Fresh sage (Finely sliced)
  • 1 White onion (Small; very finely diced)
  • 1 Orange (Use zest and juice)
  • 500 g Sausage meat
  • 1 packet Ready-rolled puff pastry (The mixture makes two sausage rolls; packet weight not stated)
  • 125 g Cranberry sauce (Good quality; source gives a range of 100–150 g, using half on each roll)
  • Salt (For seasoning the filling, to taste)
  • Black pepper (For seasoning the filling, to taste)
  • 1 Egg (Whisked with the egg yolk for egg wash)
  • 1 Egg yolk (Whisked with the egg for egg wash)
  • Oil (For sweating the onion; amount not stated)
  • Maldon salt (For seasoning the tops, to taste)
  • Sesame seeds (For topping; source also suggests onion seeds as an alternative)

Steps

  1. 1

Very finely dice the onion and finely slice the sage. Cut the brie into small cubes, and zest and juice the orange.

  2. 2

Heat a little oil in a pan. Add the diced onion and sweat it until golden, stirring as needed.

  3. 3

Just before the onion is ready, add the sliced sage and mix it through the pan.

  4. 4

Transfer the onion and sage to a bowl and refrigerate until cooled.

  5. 5

In a large bowl, combine the sausage meat, turkey mince, cubed brie, orange zest and juice, salt, pepper, and cooled onion mixture.

  6. 6

Lay out the full sheet of ready-rolled puff pastry and cut it into two equal pieces across the halfway point.

  7. 7

Divide the meat mixture in half and distribute it evenly over the two pieces of pastry.

  8. 8

Spoon half the cranberry sauce over each portion of meat and spread it evenly across the top.

  9. 9

Whisk the egg and egg yolk together. Brush the pastry generously on either side of the filling with the egg wash.

  10. 10

Fold the pastry over the meat and cranberry sauce, bringing it onto the other side of the pastry, and seal the filling inside.

  11. 11

Season the tops with Maldon salt and sesame seeds, or onion seeds if preferred.

  12. 12

Preheat the oven to 190°C. Line a baking tray with baking paper and place the rolls on it. Bake for 35–40 minutes, until golden brown and cooked in the middle.

  13. 13

Allow the rolls to rest before slicing. Once cool and sliced, freeze them if making ahead for a party.

Notes

The source lists cranberry sauce as 100–150 g; 125 g is used here as the midpoint, split evenly between the two rolls. Pastry packet weight, oil amount, and quantities for seasoning and seeds are not specified. The source does not provide a cooling duration or a specific doneness temperature.
