Creamy Shrimp Cocktail

Ingredients
- 2 lb pre-cooked shrimp (cleaned and tail-off)
- 0.5 cup lime juice (fresh)
- salt (to taste)
- black pepper (to taste)
- 1 red bell pepper (diced)
- 0.5 red onion (finely chopped)
- 0.25 cup cilantro (finely chopped)
- 2 tbsp mayonnaise
- 1 dash ketchup (a splash)
- 1 dash Tabasco sauce (a little bit for flavor)

In a large bowl, place the two pounds of pre-cooked shrimp.

Add the half cup of lime juice, salt, and pepper to taste to the shrimp.

Stir well so the shrimp are thoroughly coated with the lime juice and set the mixture aside.

Finely chop the red bell pepper, red onion, and cilantro.

Incorporate the chopped vegetables into the bowl with the shrimp.

Add the two tablespoons of mayonnaise, a splash of ketchup, and a dash of Tabasco sauce.

Mix all the ingredients uniformly until a creamy consistency is achieved.

Taste for seasoning and adjust salt if necessary before serving.
Notes
You can serve this cocktail with fried plantain chips or saltine crackers. Tabasco sauce is mainly used to enhance the flavor, not necessarily to make it very spicy.
