Ingredients

  • 500 g yuca (peeled, fibrous core removed, and cooked until soft)
  • 0.5 cup mozzarella cheese (shredded)
  • 0.5 cup Manaba cheese (or salty fresh cheese, shredded)
  • 1 egg
  • 0.25 cup heavy cream (for the cheese sauce)
  • 2 tbsp cream cheese (for the cheese sauce)
  • 1 clove garlic (for the cheese sauce)
  • salt (to taste)
  • pepper (to taste)
  • 0.5 avocado (for serving)
  • 2 egg (poached, for serving)
  • 2 slices bacon (crispy, for garnish)

Steps

    Peel the yuca, remove the central fibrous core, and cut it into pieces. Cook in boiling water until very soft.

    Mash the hot cooked yuca until a smooth and lump-free puree is obtained.

    Add the shredded mozzarella and Manaba cheese to the yuca dough.

    Incorporate one egg into the mixture and knead well until it reaches a stretchy, sticky, yet consistent texture.

    Preheat the waffle maker and place portions of the dough inside. Cook until the waffles are golden and crispy.

    For the cheese sauce, place the heavy cream, cream cheese, a bit more Manaba cheese, the garlic clove, salt, and pepper in a blender. Blend until smooth.

    Serve the waffles hot, accompanied by avocado slices and a poached egg on top.

    Drizzle with the prepared cheese sauce and finish with pieces of crispy bacon on top.

Notes

Manaba cheese is a traditional cheese from Ecuador; if you cannot find it, you can substitute it with a salty fresh cheese or mild feta. The consistency of the dough should be elastic thanks to the natural starch in the yuca.
