Ingredients

  • 1.5 cup shredded mozzarella cheese (divided)
  • 0.75 cup almond flour (can be substituted with finely processed cauliflower)
  • 2 tbsp cream cheese (softened)
  • 1 tsp baking powder (helps the bread rise and become fluffy)
  • salt (a pinch (optional, since cheeses are salty))
  • 1 egg (at room temperature)
  • 2 tbsp unsalted butter (melted)
  • 1 tbsp fresh parsley (finely chopped (basil can be used instead))
  • 2 clove fresh garlic (finely minced)
  • 0.25 cup parmesan cheese (freshly grated from a block)

Steps

    Preheat the oven to 200°C (400°F).

    In a large microwave-safe bowl, combine the shredded mozzarella cheese, almond flour, cream cheese, and baking powder. Add a pinch of salt if desired.

    Microwave the mixture on high for 1 minute until the cheeses begin to melt and soften.

    Remove the bowl from the microwave, add the egg directly to the mixture, and stir vigorously until all ingredients are fully combined and a sticky dough forms.

    Place the dough onto a baking sheet lined with parchment paper or a silicone mat. Shape the dough into an oval or your preferred elongated shape.

    In a separate small bowl, mix the melted butter, chopped parsley, fresh garlic, and grated parmesan cheese.

    Spread the garlic butter mixture evenly over the top of the dough, using the back of a spoon to cover all edges.

    Bake in the preheated oven for 15 to 20 minutes. Check at 15 minutes to ensure it is golden brown and the edges aren't burning.

    Remove from the oven and let it rest for 1 to 2 minutes so the bread's structure sets before slicing.

Notes

If you have a nut allergy, you can substitute the almond flour with finely processed cauliflower. It is recommended to use block parmesan cheese and grate it fresh for better flavor and texture. It can be served alone or accompanied by marinara sauce.
