Ingredients

  • 2 lb Chicken breast (Cut into pieces, strips, or nuggets)
  • 1.5 cup Unflavored protein powder (Whey isolate type for the breading)
  • 1 cup Almond milk (Unsweetened)
  • 1 Egg (Large)
  • 2 cup Coconut oil (For frying (or goose fat/bacon grease))
  • 1 tbsp Celery salt (Part of the 11-spice blend)
  • 1 tsp White pepper
  • 1 tsp Black pepper
  • 1 tsp Mustard powder
  • 1 tbsp Garlic powder
  • 1 tbsp Onion powder
  • 1 tbsp Paprika
  • 0.5 tsp Ground ginger
  • 0.5 tsp Dried thyme
  • 0.5 tsp Dried basil
  • 0.5 tsp Dried oregano
  • 1 tsp Salt (To taste)

Steps

    In a small bowl, mix the 11 herbs and spices: onion powder, thyme, basil, ginger, paprika, garlic powder, celery salt, oregano, mustard powder, black pepper, white pepper, and salt.

    Divide the spice blend into two equal parts.

    In a large bowl, combine the unflavored protein powder with one half of the spice blend. Mix well until it resembles breading flour.

    In another bowl, whisk together the almond milk, egg, and the other half of the spice blend until well combined.

    Place the chicken pieces into the almond milk liquid mixture. Ensure they are well coated and let marinate in the refrigerator for at least 1 hour (preferably a few hours or overnight).

    Prepare the breading station: remove the chicken from the marinade and dredge it through the protein powder mixture, pressing down so it adheres. For a thicker coating, you can perform a double-dredge by dipping the chicken back into the liquid and then into the powder again.

    For frying: Heat the coconut oil in a deep fryer or deep skillet. Fry the chicken for about 8 minutes, removing and re-submerging if necessary, until golden brown and crispy.

    Drain the fried chicken on paper towels.

    For air fryer (alternative): Place the chicken in the basket, spray with a little coconut oil, and cook at 200°C (400°F) for about 10-12 minutes, flipping halfway through until crispy.

Notes

The author recommends the deep-frying method for a more authentic KFC flavor, although the air fryer is an excellent low-fat option. The protein powder must be unflavored to avoid ruining the spice profile.
