Ingredients

  • 0.5 red bell pepper (pith and seeds removed, thinly sliced)
  • 0.5 green bell pepper (pith and seeds removed, thinly sliced)
  • 0.5 sweet onion (large, thinly sliced)
  • 2 tbsp vegetable oil (divided; any high-heat oil works)
  • 1 tsp salt (divided (0.5 tsp for veggies, 0.5 tsp for steak))
  • 1.5 tsp garlic powder (divided (0.5 tsp for veggies, 1 tsp for steak))
  • 0.5 tsp black pepper (divided (0.25 tsp for veggies, 0.25 tsp for steak))
  • 1 lb sirloin steak (thinly sliced)
  • 4 hoagie rolls (split open)
  • 6 slices provolone cheese (1 to 2 slices per sandwich)

Steps

    Preheat your oven to 400°F (200°C).

    Prepare the vegetables by removing the pith and seeds from the red and green bell peppers and thinly slicing them. Thinly slice the half onion.

    Heat a large skillet over medium-high heat. Add 1 tablespoon of vegetable oil and wait until it is shimmering and very hot.

    Add the sliced peppers and onions to the skillet. Season with 1/2 teaspoon of salt, 1/2 teaspoon of garlic powder, and 1/4 teaspoon of black pepper.

    Cook the vegetables, stirring occasionally, for about 10 minutes or until they are browned and caramelized. Transfer the cooked vegetables to a bowl and set aside.

    While the vegetables cook, thinly slice the sirloin steak. Place the sliced steak in a large bowl.

    Season the steak with 1 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Toss to coat the meat evenly.

    In the same skillet used for the vegetables, add the remaining 1 tablespoon of vegetable oil and increase the heat to high.

    Once the oil is shimmering, add the steak and arrange it in an even layer. Let it cook undisturbed for about 90 seconds to develop a sear.

    Flip the steak over and cook for another 60 seconds until evenly browned.

    Add the cooked vegetables back into the skillet with the steak. Mix well and remove from the heat.

    Place the 4 hoagie rolls onto a baking sheet, cut side up. Bake in the preheated oven for 8 minutes until toasty.

    Remove the rolls from the oven and evenly divide the steak and vegetable mixture among the four buns.

    Top each sandwich with 1 to 2 slices of provolone cheese. Let the cheese melt for 1-2 minutes from the residual heat of the steak, or return to the oven for a minute if needed.

    Close the sandwiches and serve immediately.

Notes

For easier slicing of the steak, you can place the meat in the freezer for 20-30 minutes before cutting. While provolone is used here, Cheez Whiz or American cheese are also popular traditional options.
