Blood Orange Vanilla Margarita

Ingredients
- 2 oz Tequila Blanco (high quality blanco recommended)
- 1 oz Lime Juice (freshly squeezed)
- 0.25 tsp Vanilla Bean Paste (or vanilla extract)
- 0.5 oz Agave Nectar (divided)
- 2 oz Blood Orange Juice (freshly squeezed)
- Salt (for rimming the glass)
- Ice (for shaking and serving)

Rim a rocks glass with salt by wetting the edge with a lime wedge and dipping it into a small plate of salt.

In a cocktail shaker filled with ice, combine the tequila blanco, lime juice, vanilla bean paste, and half of the agave nectar (about 0.25 oz).

Shake vigorously for about 15 seconds until the shaker is well-chilled.

In the bottom of the prepared rocks glass, stir together the blood orange juice and the remaining agave nectar.

Fill the rocks glass with fresh ice.

Slowly strain the tequila mixture from the shaker over the back of a spoon into the glass to create a layered effect over the blood orange juice.

Garnish with a slice of blood orange or a lime wheel and serve immediately.
Notes
To achieve the layered look, ensure the blood orange juice and agave mixture is at the bottom and pour the shaken cocktail very slowly over ice. The vanilla bean paste provides beautiful specks and a deeper flavor than extract.
