Ingredients
- 4 Limes (washed well, ends trimmed, and quartered)
- 4 cup Water (cold)
- 0.25 cup Sugar (adjust to taste)
- 0.5 cup Sweetened condensed milk (more or less to desired creaminess)
- Ice (for serving)
Steps
- 1
Wash the limes thoroughly to remove any wax or residue. Trim the ends off each lime and cut them into quarters.
- 2
Place the lime quarters into a blender and add the cold water and sugar.
- 3
Pulse the blender 5-7 times. Do not over-blend; you want to extract the juice and oils from the rind without pulverizing the bitter white pith completely.
- 4
Strain the mixture through a fine-mesh sieve into a large pitcher, discarding the lime solids.
- 5
Pour the strained lime water back into the blender (or whisk it in the pitcher). Add the sweetened condensed milk.
- 6
Blend or whisk for a few seconds until the mixture is frothy and well combined.
- 7
Serve immediately over plenty of ice. This drink is best enjoyed fresh as it can become bitter if left to sit.
Notes
To prevent bitterness: Ensure you only pulse the blender a few times rather than running it continuously. Straining immediately is key. Some recipes suggest removing the white core of the lime before blending to further reduce bitterness.
