Ingredients
- 2 tbsp unsalted butter
- 8 oz kataifi (roughly chopped or broken up)
- 1 cup dark chocolate chips
- 0.5 cup creamy peanut butter
- 0.5 cup marshmallow fluff

Melt 2 tablespoons of unsalted butter in a large pan over medium heat.

Add in the 8 ounces of chopped kataifi and cook, toasting the kataifi until it is deep golden brown and crunchy, being careful not to burn it.

Remove the toasted kataifi from the heat and set aside to cool down.

In a large microwave-safe bowl, add 1 cup of dark chocolate chips. Microwave for 2 minutes, stopping halfway to stir. Stir when done until the chocolate is completely melted and smooth.

In a chocolate bar mold, pour a thin layer of the melted chocolate into each slot, ensuring there is plenty of room left in the mold for the filling.

Place the mold into the fridge to allow the chocolate to set for 10 minutes.

In two separate bowls, split up the toasted and cooled kataifi evenly.

Add 1/2 cup of creamy peanut butter to one bowl and 1/2 cup of marshmallow fluff to the other. Mix each bowl well to evenly incorporate the kataifi.

Remove the chocolate mold from the fridge. Pour a thick layer of the peanut kataifi mixture into each mold, filling them up partially. Use a spoon to flatten the mixture down.

Pour a thick layer of the marshmallow kataifi mixture on top of the peanut layer, and repeat the flattening process.

Pour the remaining melted dark chocolate on top of the kataifi mixture, then spread the chocolate to evenly coat and seal the bars.

Place the molds back into the fridge for 30 minutes to 1 hour to fully set.

Remove the chocolate bars from the molds and keep refrigerated until ready to serve.
Notes
Ensure the kataifi is completely cooled before mixing with the peanut butter and fluff to maintain its crunch. Keep the finished bars refrigerated as the marshmallow fluff and peanut butter filling can become soft at room temperature.
