Steps

  1. 1

Pound the four boneless chicken fillets to an even 1/4-inch thickness.

  2. 2

Season both sides of the chicken with salt, black pepper, garlic powder, smoked paprika powder, and onion powder.

  3. 3

In a bowl, combine the all-purpose flour, salt, garlic powder, smoked paprika, onion powder, and black pepper. Mix well.

  4. 4

In another bowl, crack the egg, add the water, and whisk to combine.

  5. 5

In a separate bowl, combine the panko breadcrumbs and dried parsley.

  6. 6

Coat each chicken fillet in the dry flour mixture, then in the egg mixture, then again in the dry flour mixture, followed by the egg mixture a second time. Finish by coating the chicken in the parsley-seasoned breadcrumbs.

  7. 7

    Heat frying oil to 360°F.

  8. 8

Add the breaded chicken to the hot oil and fry for 4–5 minutes, or until the internal temperature reaches 165°F.

  9. 9

Place mozzarella slices on the fried chicken fillets.

  10. 10

Broil the chicken for 3–5 minutes, until the mozzarella is melted.
