One Pot Creamy Cajun Sausage Pasta

Ingredients

  • 1 lb cajun style sausage (sliced)
  • 0.5 yellow onion (diced)
  • 1 red bell pepper (sliced)
  • 14 oz fire roasted tomatoes (1 can)
  • 2 garlic cloves (minced)
  • 2.5 cup beef broth (2-3 cups as needed)
  • 9 oz pasta (8-10 oz dry pasta)
  • 0.5 cup heavy cream
  • 3 oz cream cheese
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp thyme
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp cayenne
  • 2 tbsp olive oil (divided, for sautéing)
  • parmesan cheese (freshly grated, to taste)

Steps

    In a small bowl, combine the salt, pepper, paprika, cumin, thyme, garlic powder, onion powder, and cayenne to create the Cajun seasoning blend.

    Heat a large pot or deep skillet over medium-high heat with a drizzle of olive oil.

    Add the sliced Cajun sausage to the pot. Sauté until the sausage is browned and crispy on the edges. Remove the sausage from the pot and set aside.

    Add another drizzle of olive oil to the same pot. Add the diced yellow onion and sliced red bell pepper.

    Add about half of the prepared Cajun seasoning to the vegetables and sauté until they begin to soften.

    Add the minced garlic and cook for about 30 seconds until fragrant.

    Pour in the can of fire-roasted tomatoes. Let the mixture simmer for a few minutes.

    Add the beef broth and the dry pasta to the pot. Bring to a boil, then reduce heat and simmer until the pasta is cooked and most of the liquid has been absorbed.

    Stir in the heavy cream and cream cheese until the cheese is melted and the sauce is smooth and creamy.

    Add the cooked sausage back into the pot along with freshly grated parmesan cheese. Stir to combine and serve immediately.

Notes

You can use store-bought Cajun seasoning if preferred, but the homemade blend allows you to control the salt and heat levels.
