Ingredients

  • 1 cabeza green cabbage (Cut into 4 thick slices, keeping the core intact so they do not fall apart)
  • 2 tbsp olive oil (For brushing both sides of the cabbage)
  • 1 tsp garlic powder (Divided between seasoning the cabbage and the butter)
  • 0.5 tsp ground black pepper (For seasoning both sides of the cabbage)
  • 2 tbsp unsalted butter (Melted and mixed with the garlic powder)
  • 1 cup shredded cheddar cheese (For topping the cabbage steaks)
  • 4 rebanadas cooked bacon (Crumbled; use more or less to taste)
  • 3 scallions (Thinly sliced)
  • 0.5 cup sour cream (For serving)
  • salt (To taste; the bacon and cheese also add salt)

Steps

  1. 1

Preheat the oven to 425 °F (220 °C) and line a baking sheet with parchment paper or lightly grease it with oil.

  2. 2

Cut the cabbage into 4 thick slices, approximately 2.5 to 3 cm thick, making sure the core remains intact in each slice to hold them together.

  3. 3

Place the cabbage steaks on the baking sheet. Brush both sides with the olive oil.

  4. 4

Season both sides with the garlic powder, black pepper, and, if desired, a little salt.

  5. 5

Roast the cabbage for 20 to 25 minutes, carefully turning it halfway through cooking, until tender in the center and golden brown and crisp around the edges.

  6. 6

While the cabbage roasts, mix the melted butter with half of the remaining garlic powder until evenly combined.

  7. 7

Remove the cabbage from the oven and brush the top of each steak with the garlic butter.

  8. 8

Top each steak with the shredded cheddar cheese, crumbled bacon, and sliced scallions.

  9. 9

Return the baking sheet to the oven for 5 to 8 minutes, until the cheese is completely melted and bubbling and the toppings are hot.

  10. 10

Serve the cabbage steaks immediately with a spoonful of sour cream and, if desired, additional scallions, bacon, or any other toppings.

Notes

Exact quantities do not appear in the description or transcript; they were estimated for 4 steaks. For a vegetarian version, omit the bacon or replace it with plant-based bacon. Handle the slices with a wide spatula to prevent them from falling apart.
