Ingredients
- 2 apples (peeled, cored, and cut into small dice)
- 1 ripe banana (mashed; naturally sweetens the batter)
- 1 egg (preferably at room temperature)
- 0.5 cup plain Greek yogurt (unsweetened)
- 1 cup oat flour (or finely blended rolled oats)
- 1 tsp baking powder
- 1 tsp ground cinnamon (plus a little more for finishing, if desired)
- 1 tsp vanilla extract (optional)
- salt (a pinch)
- 1 tbsp avocado oil or neutral oil (for greasing the baking sheet or spraying the fritters)
- powdered sugar or powdered erythritol (optional, for dusting; use a sweetener if the goal is zero added sugar)
Steps
- 1
Preheat the oven to 180 °C. Line a baking sheet with parchment paper and lightly grease it with a little oil.
- 2
Peel, core, and cut the apples into evenly sized small dice so they cook uniformly.
- 3
In a large bowl, mash the banana with a fork until as smooth as possible.
- 4
Add the egg, Greek yogurt, and vanilla, then whisk until the mixture is smooth.
- 5
Add the oat flour, baking powder, cinnamon, and salt. Mix just until a thick batter forms, without overmixing.
- 6
Fold in the diced apples with a spatula, making sure they are evenly distributed throughout the batter.
- 7
Drop eight portions of batter onto the baking sheet, spacing them apart. Flatten them slightly with the back of a spoon to give them the shape of thick fritters.
- 8
Very lightly brush or spray the tops with the remaining oil.
- 9
Bake for 16 to 18 minutes, until the fritters are puffed, golden around the edges, and firm to the touch.
- 10
Let cool for a few minutes on the baking sheet, then transfer to a wire rack. If desired, dust with cinnamon and a little powdered sugar or powdered erythritol before serving.
Notes
The provided post does not contain the recipe, quantities, or steps; this version is therefore a culinary reconstruction based on the title and context of the post, rather than a faithful transcription from the creator. Store the fritters in an airtight container in the refrigerator for up to 3 days; reheat them for a few minutes in the oven or toaster oven. The batter should remain thick so the fritters do not spread.
