Weights are estimates. Together, the ingredients weigh about 1.5 kg before cooking, which is about 375 g per serving.
Steps
Place the chicken thighs in a bowl. Add the kosher salt, 1 tablespoon soy sauce, and 2 tablespoons hoisin sauce, then mix well to coat the chicken.
Heat a pan over medium heat. Sear the chicken thighs for 5–6 minutes per side, until deeply golden brown. Remove them from the pan and set aside.
In the same pan, add the minced garlic and ginger paste. Sauté for 2–3 minutes, until fragrant. Add a little salt and the black pepper, and toast the pepper briefly.
Pour in the white vinegar and scrape the browned bits from the bottom of the pan to deglaze it.
Add the remaining 1/4 cup soy sauce, 1/2 cup hoisin sauce, dark soy sauce if using, 3/4 cup water, and brown sugar. Stir to combine.
Cut the seared chicken into chunky, bite-sized pieces and return it to the pan.
Bring the sauce to a simmer and cook the chicken in it for 5–7 minutes, until fully cooked through.
In a small bowl, mix the cornstarch with 1 tablespoon water to make a slurry.
Stir the slurry into the sauce. Bring the sauce to a boil while stirring, until it thickens and turns glossy. The transcript says to add the slurry around the 7-minute mark.
Garnish with sliced spring onions and serve with steamed white rice.
Notes
The description’s ingredient list does not give quantities for the spring onion garnish or rice. It lists 1–2 tablespoons black pepper; the structured amount uses the midpoint. Although the dish is called bourbon chicken, no bourbon is listed or used in the supplied method.
