Ingredients

  • 4.5 lb whole chicken (4- to 5-pound bird, trimmed of excess fat)
  • 6 tsp Kosher salt (Diamond Crystal brand preferred; use 5 to 7 teaspoons depending on bird weight)
  • 2 tsp black pepper
  • 6 garlic cloves (peeled, divided)
  • 3 tbsp extra-virgin olive oil (divided (1 tbsp for pot, 2 tbsp for chicken))
  • 1 onion (large, any variety, cut into 1/4-inch slices)
  • 1 carrot (large, peeled and quartered lengthwise)
  • 2 tsp smoked paprika
  • 1 tsp ground turmeric

Steps

    Pat the chicken dry with paper towels to ensure the seasoning adheres well.

    Season the chicken generously all over, including inside the cavity, with 5 to 7 teaspoons of salt (adjusting for the weight of the bird) and about 2 teaspoons of pepper. For best results, this can be done up to 24 hours in advance and kept uncovered in the refrigerator.

    Place half of the peeled garlic cloves inside the cavity of the chicken.

    Drizzle the bottom of a 6- to 7-quart slow cooker with approximately 1 tablespoon of olive oil.

    Arrange the onion slices in a single layer at the bottom of the pot, and place the carrot sticks on top to create a rack for the chicken to rest on.

    Place the chicken on top of the carrot sticks. Drizzle the bird with the remaining 2 tablespoons of olive oil.

    Sprinkle the smoked paprika and turmeric all over the top and sides of the chicken, ensuring you get into the nooks and crannies of the wings and legs.

    Scatter the remaining garlic cloves around the sides of the chicken in the slow cooker.

    Cover and cook on low for 6 to 7 hours, or on high for 3 1/2 to 4 hours. The chicken is done when an instant-read thermometer inserted into the thickest part of the thigh reads between 155°F and 165°F (68°C to 74°C).

Notes

The skin will not be crispy in the slow cooker. To crisp the skin, transfer the cooked chicken to an oven-safe dish and place under the broiler for a few minutes. Save the liquid remaining in the pot; it is a rich broth perfect for soups. If seasoning in advance, take the chicken out of the refrigerator 30 minutes before cooking to take the chill off.
