Ingredients
- 2 tbsp olive oil (for frying)
- 3 garlic cloves (crushed)
- 2 chicken breasts (boneless and skinless)
- 0.5 onion (finely diced)
- 3 cloves garlic (minced)
- 0.5 cup chicken stock
- 1 tbsp lemon juice (freshly squeezed)
- 1 tsp dried herbs (such as oregano, thyme, or Italian seasoning)
- 0.5 cup heavy cream
Steps
- 1
Gently warm some olive oil in a large pan over medium-low heat.
- 2
Add a few crushed garlic cloves to the oil and let them infuse for a few minutes.
- 3
Increase the heat to high and lay down the chicken breasts in the pan.
- 4
Brown the chicken for a few minutes on each side until golden.
- 5
Remove the chicken from the pan and set aside.
- 6
Turn down the heat slightly and add the finely diced onion to the same pan.
- 7
Sauté the onion until softened, then add the minced garlic and chicken stock.
- 8
Scrape up all the browned chicken bits (fond) from the bottom of the pan as the liquid simmers.
- 9
Add a bit of fresh lemon juice and your choice of dried herbs to the pan.
- 10
Pour in the heavy cream and stir to combine, creating a creamy sauce.
- 11
Return the chicken to the pan and let it finish cooking in the sauce for a couple more minutes.
- 12
Serve the chicken and sauce over pasta or mashed potatoes.
