Tiramisù
A light, classic Trevisan-style tiramisù made with raw egg yolks whipped with sugar, cold mascarpone, coffee-soaked savoiardi ladyfingers, and cocoa. It can be assembled in individual ramekins or as a family-style dessert and is best made ahead and chilled.

Ingredients
- 4 large egg yolks (Raw; not cooked)
- 0.5 cup granulated sugar
- 8 oz mascarpone cheese (Keep refrigerated until ready to use; do not overmix)
- 1.5 cup strong brewed coffee (Cooled; use strong brewed coffee rather than instant espresso powder)
- 1 package dry sponge-cake ladyfingers (7-ounce package; also called savoiardi biscuits)
- 2 tbsp unsweetened cocoa powder (For dusting)

Brew strong coffee and let it cool completely. Prepare either six 8-ounce ramekins or one 8-inch square baking dish.

Place the egg yolks and sugar in a medium bowl. Using an electric mixer, whip on medium-high speed until the mixture is very pale, thick, and voluminous, about 3 to 5 minutes.

Add the cold mascarpone to the yolk mixture. Mix on low speed only until just combined and smooth, stopping as soon as the filling comes together. Do not overmix, or the mascarpone may break.

Dip each ladyfinger in the cooled coffee for only 1 to 2 seconds per side, allowing excess coffee to drain briefly. The biscuits should be moistened but should not become soggy.

Arrange a layer of the coffee-soaked ladyfingers in the bottom of the ramekins or square dish. Break the biscuits as needed so they fit snugly.

Spread or spoon half of the mascarpone mixture over the ladyfingers, distributing it evenly to the edges.

Add a second layer of coffee-dipped ladyfingers, followed by the remaining mascarpone mixture. Smooth the surface.

Cover and refrigerate until thoroughly chilled and set, at least 3 hours and preferably overnight.

Just before serving, dust the top generously with unsweetened cocoa powder.
Notes
The recipe uses raw egg yolks; they are not cooked. Cold mascarpone is less likely to break during mixing, so keep it refrigerated until needed. Do not soak the ladyfingers longer than 1 to 2 seconds because they can become soggy. The assembled tiramisù can be refrigerated for up to 2 days.
