Ooey Gooey Cinnamon Rolls

Ingredients
- 0.75 cup warm milk (divided)
- 1 pack instant yeast (7g; if using active dry, activate in warm milk and sugar first)
- 0.25 cup sugar
- 1 egg
- 1 egg yolk
- 0.25 cup unsalted butter (melted)
- 3 cup bread flour
- 0.75 tsp salt
- 0.5 cup unsalted butter (melted)
- 0.5 cup brown sugar
- 0.25 cup white sugar
- 2 tbsp heavy cream
- 1 tsp vanilla
- 0.25 tsp salt
- 0.66 cup brown sugar
- 1.5 tsp cinnamon
- 0.33 cup butter (softened)
- 4 oz cream cheese
- 3 tbsp butter
- 0.5 tsp vanilla
- 0.75 cup powdered sugar

Add 3/4 cup (180g) warm milk into a large bowl and sprinkle on 1 pack (7g) instant yeast. Give it a little mix.

Add 1/4 cup (50g) sugar, 1 egg, 1 egg yolk, and 1/4 cup (57g) melted unsalted butter to the milk mixture. Note: if you’re using active dry yeast, you’ll need to activate it in warm milk and sugar first before adding the other ingredients.

Add 3 cups (360g) bread flour and 3/4 tsp (4g) salt to the bowl.

Knead the dough for about 8-10 minutes until smooth and elastic.

Place the dough in a bowl and let it rise in a warm spot for about 1 hour.

While the dough rises, prepare the bottom layer by mixing 1/2 cup (113g) melted unsalted butter, 1/2 cup (100g) brown sugar, 1/4 cup (50g) white sugar, 2 tbsp (30g) heavy cream, 1 tsp (4g) vanilla, and 1/4 tsp (1g) salt until well combined.

Pour the bottom layer mixture into the bottom of your baking tray.

Prepare the filling by mixing 2/3 cup (133g) brown sugar, 1 1/2 tsp (4g) cinnamon, and 1/3 cup (76g) softened butter together well.

Roll out the risen dough into a rectangle. Spread the filling evenly over the flattened dough.

Roll the dough up tightly and cut into 8 equal pieces.

Place the rolls on top of the bottom layer in the baking tray and let them rise for about 30-45 minutes.

Preheat your oven to 350°F (175°C). Bake the rolls for 22-27 minutes.

While the rolls bake, prepare the icing by creaming together 4 oz (113g) cream cheese and 3 tbsp (42g) butter. Add 1/2 tsp (2g) vanilla and mix well. Slowly add in 3/4 cup (90g) powdered sugar until smooth.

Optional: add a bit of milk or heavy cream to thin out the frosting if desired.

Spread the cream cheese icing on top of the warm rolls before serving.
Notes
If using active dry yeast instead of instant, ensure you proof it in the warm milk and sugar for 5-10 minutes until foamy before adding other dough ingredients. You can adjust the icing consistency with a splash of milk or cream.
