- 0.5 cup unsalted butter (cubed)
- 0.5 cup natural cocoa powder (unsweetened, plus extra for dusting)
- 0.75 cup granulated sugar
- 1 tsp cinnamon (optional)
- 1 tsp espresso powder (optional, to enhance chocolate flavor)
- 0.25 tsp salt (plus more for a saltier finish if desired)
- 4 eggs (large)
- 1 tsp vanilla extract (optional)

Prepare a double boiler by filling a medium pot with about 1.5 inches of water and bringing it to a simmer over medium heat.

Finely chop the 4 ounces of bittersweet chocolate into small, uniform pieces to ensure even melting.

Place the chopped chocolate and 1/2 cup of cubed unsalted butter into a medium heat-proof bowl.

Set the bowl over the simmering water, ensuring the bottom of the bowl does not touch the water. Stir occasionally until the mixture is fully melted and smooth.
