Ingredients

- 1 cup Sweet corn
- 2 tbsp Greek yogurt
- 2 tbsp Oat flour

Heat a nonstick skillet over medium heat. Once hot, pour in a portion of the mixture and spread it with the back of a spoon to form a large piece, like a pancake.

Cook the cachapa for approximately 2 to 3 minutes, until the surface looks firmer and bubbles begin to appear. The base should be golden and should lift easily from the skillet.

Carefully flip and cook the other side for 1 to 2 minutes, until it is also lightly golden and the cachapa is fully cooked.

Place low-fat cheese over one half of the hot cachapa. Fold it over to cover the filling and let it rest for a few moments so the cheese warms and softens.

Repeat the process with the remaining mixture and cheese. Serve the cachapas hot and freshly made.
