Ingredients
- ginger (sliced or minced)
- garlic (minced)
- star anise (whole)
- 1.5 lb beef chunks (stewing beef, cut into bite-sized pieces)
- soy sauce (to taste)
- Shaoxing wine (or dry sherry)
- 1 onions (chopped)
- 2 tomatoes (chopped)
- hot water (enough to cover ingredients)
- 2 potatoes (peeled and cubed)
- 2 carrots (peeled and chopped)
- steaming rice (for serving)

Set the Instant Pot to Sauté mode. Add the ginger, garlic, and star anise, and sauté until fragrant.

Add the beef chunks to the pot and sear until browned on all sides.

Stir in the soy sauce, Shaoxing wine, onions, and tomatoes.

Pour in enough hot water to cover the ingredients. Seal the lid and cook on high pressure for 30 minutes.

Perform a quick release or natural release, then open the lid and add the potatoes and carrots. Cook on high pressure for an additional 10 minutes.

Once finished, release the pressure, stir, and serve hot over steaming rice.
Notes
Ensure the beef is patted dry before searing to get a better crust. You can adjust the amount of soy sauce and wine based on your preference for saltiness and depth of flavor.
