A very creamy homemade flan made with cream cheese, sweetened condensed milk, and instant coffee, topped with golden caramel. It can be cooked in a water bath in the oven or on the stovetop.

Ingredients

  • 150 g White sugar (For preparing the caramel.)
  • 5 Eggs
  • 250 g Cream cheese
  • 1 lata Sweetened condensed milk
  • 1.5 cup Milk or evaporated milk (Approximately 360 ml; regular milk or evaporated milk may be used.)
  • 2 tbsp Instant coffee powder
  • 1 tbsp Vanilla extract
  • 1 tbsp Cornstarch

    Prepare the caramel: place the sugar in a flan mold or skillet and heat it until it melts and turns light golden. Watch it constantly to prevent it from burning.

    Carefully pour the hot caramel into the flan mold and tilt it to coat the bottom. Let it cool slightly until it sets a little.

    Place the eggs, cream cheese, sweetened condensed milk, milk or evaporated milk, instant coffee, vanilla, and cornstarch in a blender.

    Blend the ingredients only until combined and smooth. Do not overblend, to avoid incorporating too much air.

    Pour the flan mixture over the caramel in the mold. Cover the mold with aluminum foil.

    To cook in the oven, place the covered mold in a pan of hot water, ensuring that the water reaches approximately halfway up the sides of the mold. Bake at 180 °C for 50 to 60 minutes, or until a toothpick inserted into the center comes out dry or with only a few moist crumbs.

    Alternatively, cook the covered mold in a water bath on the stovetop for approximately 50 minutes. The mold should be supported without touching the bottom of the pot directly; cook until a toothpick inserted into the center comes out dry.

    Remove the flan from the water bath and let it cool to room temperature. Then refrigerate it for 2 to 3 hours so it can finish setting and become thoroughly chilled.

    To unmold it, briefly place the mold in a warm water bath to loosen the caramel. Run a thin knife around the edge, place a plate on top, and carefully invert the flan.

    Serve the flan chilled, allowing the caramel sauce to cover the top and sides.

Notes

Cooking time may vary depending on the size and material of the mold. Avoid bringing the water in the water bath to a vigorous boil, as this can result in a less smooth texture.
