Weights are estimates. Together, the ingredients weigh about 950 g before cooking, which is about 475 g per serving.
Steps
Wash the chicken wings with a little salt and water to clean them thoroughly.
Place the wings in a pot with cold water. Add green onions, a few slices of ginger, and a splash of cooking wine.
Bring to a boil and skim off the foam that rises to the surface. Drain the wings and set them aside.
Heat a little oil in a pan over medium-high heat.
Fry the wings until both sides are golden brown.
Add a few slices of fresh ginger, one star anise, a little sugar, light soy sauce, and dark soy sauce.
Pour a can of cola over the wings.
Cover the pan and simmer on low heat for about 8 minutes.
Uncover the pan and turn up the heat. Cook over high heat, stirring occasionally, until the sauce reduces and becomes thick and glossy.
Sprinkle with chopped green onions and serve hot.
Notes
The secret to this dish is the final reduction of the sauce over high heat, which gives it its characteristic shine and sticky texture. Be careful not to burn the sugar when initially frying the wings.
