Ingredients

  • 250 g strong white bread flour (plus extra for dusting)
  • 30 g caster sugar
  • 1 tsp salt
  • 7 g fast-action yeast (1 sachet)
  • 2 eggs
  • 75 ml warm water
  • 50 g butter (melted)
  • sunflower oil (for frying)
  • 150 g icing sugar
  • 2 tbsp water (up to 3 tbsp for glaze consistency)
  • pink food coloring (a drop)
  • sprinkles (for decoration)

    In a large bowl, combine the 250g strong white bread flour, 30g caster sugar, 1 tsp salt, 7g fast-action yeast, 2 eggs, and 75ml warm water.

    Mix the ingredients until roughly combined, then add the 50g melted butter and work the mixture into a smooth dough.

    Transfer the dough to a lightly oiled bowl. Cover the bowl and set it aside in a warm place until the dough has doubled in size, which should take about 1 hour.

    Turn the risen dough out onto a floured surface and roll it to a thickness of around 1.5cm.

    Use a round cutter (such as a glass or cookie cutter) to cut circles from the dough. Use a smaller round cutter (like the wide end of a piping tip) to remove the centers and create the donut holes.

    Place the shaped donuts on a tray lined with baking paper. Cover them and let them rise for another hour.

    Heat sunflower oil in a deep pan or fryer. Fry the donuts in batches, turning them occasionally, until they are golden brown on both sides.

    Remove the donuts from the oil and drain them on kitchen paper. Allow them to cool.

    Prepare the glaze by gradually stirring 150g icing sugar and 2-3 tbsp water together until the mixture is smooth and thick enough to coat the donuts.

    Add a drop of pink food coloring to the glaze and mix well until the color is uniform.

Notes

Ensure the water for the dough is warm to the touch but not hot, as hot water can kill the yeast. For the glaze, add the water one tablespoon at a time to ensure it doesn't become too runny.
