Ingredients

  • 1 cup rolled oats (Certified organic and glyphosate-free)
  • 3 tbsp raw cacao powder (Plus extra for garnish)
  • 1.5 tbsp chia seeds
  • 3 tbsp espresso (Cooled)
  • 1.25 cup full-fat almond milk (Dairy-free)
  • 2 tbsp raw honey (For the oat mixture)
  • 1 tsp pure vanilla extract (For the oat mixture)
  • pink Himalayan salt (A pinch)
  • 0.5 tbsp raw honey (For the topping)
  • 0.25 tsp pure vanilla extract (For the topping)
  • 30 g vanilla protein powder (Clean, organic, and gum-free)
  • 1.5 cup full-fat yoghurt (Dairy-free; for the topping)

Steps

    Combine the rolled oats, cacao powder, and chia seeds in a bowl. Stir until the dry ingredients are evenly distributed.

    Add the cooled espresso, almond milk, 2 tablespoons of raw honey, and 1 teaspoon of vanilla extract to the dry mixture. Stir thoroughly until combined and evenly moistened.

    Transfer the oat mixture to a sealable glass container and spread it into an even layer.

    Place the dairy-free yoghurt in a separate bowl. Add the 1/4 teaspoon vanilla extract, 1/2 tablespoon raw honey, and vanilla protein powder.

    Whisk the yoghurt mixture until the protein powder is fully incorporated and the topping is smooth.

    Spread the protein-yoghurt topping evenly over the oat mixture.

    Sift a little additional cacao powder over the topping for garnish.

    Seal the container and refrigerate for at least 8 hours or overnight, until the oats and chia seeds have softened and the mixture is thick and spoonable.
