Ingredients
- water (for boiling)
- salt (for boiling water and seasoning to taste)
- 1 lb green beans (fresh (trimmed) or frozen)
- 0.25 cup milk
- 10.5 oz cream of mushroom soup (1 container; can sub with cream of chicken or celery)
- 0.25 tsp salt
- 0.75 tsp black pepper
- 0.75 cup crispy fried onions (such as French's)
Steps
- 1
Preheat your oven to 350°F (175°C).
- 2
Fill a large pot with water, season generously with salt, and bring to a boil over high heat.
- 3
Prepare an ice bath by filling a large bowl with cold water and ice.
- 4
Trim the ends of the fresh green beans. If using frozen green beans, they can be used as is.
- 5
Add the green beans to the boiling water and cook for 2 to 3 minutes until they are tender and a brilliant green color.
- 6
Immediately transfer the green beans to the ice bath to stop the cooking process. Let them sit for about 2 minutes, then drain well.
- 7
In a large mixing bowl, combine 1/4 cup milk, one 10.5 oz container of cream of mushroom soup, 1/4 teaspoon salt, and 3/4 teaspoon black pepper. Whisk until smooth.
- 8
Add the drained green beans to the soup mixture and stir until they are evenly coated.
- 9
Transfer the coated green beans to a 1.5-quart casserole dish and press down lightly to create an even layer.
- 10
Bake in the preheated oven for about 30 minutes, or until the edges are bubbling.
- 11
Remove the dish from the oven and give the beans a quick stir to ensure they are evenly warmed.
- 12
Top the casserole with 3/4 cup of crispy fried onions.
- 13
Return the dish to the oven and bake for an additional 5 minutes, or until the onions are golden brown.
Notes
Variations: Add fresh herbs like sage or thyme, 1 cup of shredded cheese (cheddar, pepper jack, or fontina), or 1/2 cup of toasted sliced almonds or walnuts for extra texture. Make Ahead: You can prepare the casserole (without the onion topping) up to a day in advance and store it in the fridge. Bake as directed when ready to serve. Freezing: The casserole can be frozen without the topping. Thaw completely before adding the onions and baking.
