Toasted focaccia is layered with honey-glazed mortadella, tangy guindilla-cornichon relish mayo, and creamy burrata stracciatella. The honey, acidity, and salty meat balance one another, while the cheese softens the bold flavors.

Weights are estimates. Together, the ingredients weigh about 480 g before cooking, which is about 240 g per serving.

Steps

  1. Make the honey glaze: combine the honey, guindilla pepper brine, and olive oil. Set it aside.

  2. Make the relish mayo: mix the mayonnaise with the finely chopped guindilla peppers, finely chopped cornichons, and seeded mustard. Set it aside.

  3. Butter the cut sides of the focaccia. Toast it cut-side down in a medium-high pan until golden.

  4. Wipe any residual burnt crumbs from the pan.

  5. Add the sliced mortadella to the pan and cook until it begins to brown.

  6. Pour the honey glaze over the mortadella. Turn the slices so each piece is seared and coated in glaze.

  7. Spread the relish mayo on the focaccia and pile the glazed mortadella on top.

  8. Tear the burrata and add half to each sandwich. Close the sandwiches and serve immediately.

Notes

The source does not specify the amount of focaccia or butter. It describes enough focaccia for two sandwiches, consistent with adding half the burrata to each.
