Weights are estimates. Together, the ingredients weigh about 35 g before cooking, which is about 35 g per serving.
Steps
Thinly slice the onions and fill the chosen jar to the desired level.
Fill the jar halfway with white vinegar or apple cider vinegar.
For a jar of about 500 g, measure 1 tbsp each of salt and sugar; for a jar of about 250 g, use 0.5 tbsp of each.
Dissolve the salt and sugar in the lukewarm water. Pour the mixture into the jar over the onions until they are completely covered.
If desired, add 1 tsp of whole peppercorns.
Close the jar and place it in the refrigerator.
Notes
The amount of onions and liquid varies depending on the jar; the specified amounts of salt and sugar are proportioned for jars of about 500 g or 250 g. The text does not specify how long to let the onions rest before serving.
