Ingredients
- 1 cauliflower (medium, about 1.5–2 lbs, cut into 1/2-inch slices)
- 2 tbsp yogurt (unsweetened coconut yogurt used in source)
- 1 tsp sweet paprika
- 2 eggs
- 1 tsp dried Italian herbs
- salt (to taste)
- 1 tbsp extra virgin olive oil (for frying)
- 2 slices roast turkey
- 1.5 fresh tomatoes (sliced (1-2 tomatoes))
- 1 cup grated cheese

Cut the cauliflower into 1/2-inch slices. (Tip: You can use leftover pieces to make a cream soup.)

In a bowl large enough to dip the cauliflower slices, whisk together the 2 eggs, 2 tbsp yogurt, sweet paprika, dried Italian herbs, and salt.

Coat each cauliflower slice thoroughly in the egg and yogurt mixture.

Heat 1 tbsp extra virgin olive oil in a skillet.

When the oil is hot, add the cauliflower slices to the skillet. Lower the heat to medium-low and cook for 3–4 minutes per side until golden.

Layer the steaks: place the roast turkey slices at the bottom (or on top of the steaks), top with tomato slices, and finish with grated cheese.
