Ingredients

  • 1 cauliflower (medium, about 1.5–2 lbs, cut into 1/2-inch slices)
  • 2 tbsp yogurt (unsweetened coconut yogurt used in source)
  • 1 tsp sweet paprika
  • 2 eggs
  • 1 tsp dried Italian herbs
  • salt (to taste)
  • 1 tbsp extra virgin olive oil (for frying)
  • 2 slices roast turkey
  • 1.5 fresh tomatoes (sliced (1-2 tomatoes))
  • 1 cup grated cheese

    Cut the cauliflower into 1/2-inch slices. (Tip: You can use leftover pieces to make a cream soup.)

    In a bowl large enough to dip the cauliflower slices, whisk together the 2 eggs, 2 tbsp yogurt, sweet paprika, dried Italian herbs, and salt.

    Heat 1 tbsp extra virgin olive oil in a skillet.
