Ingredients
Steps
Preheat & Prep
Preheat a non-stick skillet over medium heat.
Mix the Dough
In a bowl, combine the cottage cheese, eggs, almond flour (if using), and a pinch of salt.
Stir the mixture until a soft, slightly sticky dough forms.
Shape & Cook
Divide the dough into 4 equal portions.
Flatten each portion into a thin circle using your hands or a rolling pin.
Place the flatbreads in the preheated skillet and cook for 2–3 minutes on each side, until lightly golden and cooked through.
Serve
Enjoy warm with your favorite toppings such as avocado, cheese, or a light spread.
Notes
For a sturdier texture, ensure you include the optional almond flour. These flatbreads are flexible enough to be used as wraps or sandwich bread.
