Crispy Tomato Fritters
These golden and crispy tomato fritters are the perfect appetizer: crunchy on the outside, tender on the inside, and packed with Mediterranean flavor. A delicious way to show that tomatoes are anything but boring.

Ingredients
- 3 ripe tomatoes (finely chopped and drained)
- 0.5 red onion (finely chopped)
- 2 tbsp fresh mint (chopped)
- 2 tbsp fresh parsley (chopped)
- 1 cup wheat flour (may vary depending on the moisture of the tomatoes)
- 1 tsp baking powder
- 0.5 cup feta cheese (crumbled)
- salt (to taste)
- black pepper (to taste)
- vegetable oil (for frying)

Finely chop the tomatoes and place them in a colander for a few minutes to remove excess liquid; this is crucial for the fritters to be crispy.

In a large bowl, combine the chopped tomatoes, red onion, mint, and parsley.

Add the crumbled feta cheese and season with salt and pepper to taste.

Gradually incorporate the flour and baking powder, mixing until you get a thick batter that holds its shape. If the mixture is too wet, add a little more flour.

Heat plenty of oil in a frying pan over medium-high heat.

Using a spoon, drop portions of the mixture into the hot oil, working in batches so as not to overcrowd the pan.

Fry the fritters for 2-3 minutes per side until they are golden brown and crispy.

Remove the fritters and drain them on paper towels before serving hot.
Notes
For best results, make sure the oil is hot enough before adding the batter. You can serve them with a yogurt sauce or tzatziki to complement the flavors.
