Air Fryer Potato Bombs
Crispy potato croquettes on the outside and soft on the inside, with melted cheese and a cornflake coating. They are ideal as a quick meal, snack, or side dish.

Ingredients
- 0.5 kg potatoes (cooked and mashed)
- 80 g flour (The author used a gluten-free all-purpose flour blend; regular flour may be used if a gluten-free version is not needed.)
- 1 tsp salt (or to taste)
- 100 g shredded cheese (Parmesan, Sardo, Reggianito, or whatever cheese is available)
- 2 eggs (large)
- 2 tbsp provençal seasoning (or your preferred seasoning; optional)
- unsweetened cornflakes (as needed to coat the potato bombs; lightly crushed if a more even coating is desired)
- oil spray (for spraying the basket and the surface of the potato bombs)

Cook the potatoes until completely tender when pierced with a fork. Drain them, let them cool enough to handle, and mash them, leaving no large lumps.

Place the mashed potatoes in a large bowl. Add the flour, salt, shredded cheese, eggs, and the provençal seasoning or chosen seasoning, if using.

Mix everything until you have a moist mixture that is firm enough to shape into portions. If necessary, let the mixture rest for a few minutes so the flour can absorb some of the moisture.

Shape uniform-sized balls or bombs with your hands. Gently press them so they are compact and do not fall apart during cooking.

Coat each potato bomb in the unsweetened cornflakes, covering all sides and pressing lightly so the coating adheres.

Preheat the air fryer to 200 °C, if your appliance requires preheating. Spray the basket with a little oil spray and arrange the potato bombs in a single layer, leaving space between them.

Lightly spray the surface of the potato bombs with oil spray. Cook them at 200 °C for 10 to 12 minutes, until golden and crispy on the outside.

After 5 minutes, open the air fryer and turn the potato bombs so they brown evenly. Continue cooking until the full 10 to 12 minutes are complete, then serve hot.
Notes
