A traditional, vibrant, and aromatic Cuban dressing made with sautéed onions, garlic, lemon, and parsley, ideal for pairing with boiled yuca or roasted pork.

Ingredients

  • 2 Onions (julienned)
  • 4 tbsp Olive oil
  • 20 g Butter
  • 1 mazo Parsley
  • 2 cloves Garlic
  • 2 Lemons (juiced)
  • Salt (to taste)
  • Black pepper (to taste)

Steps

    Julienne the two onions and finely mince the two garlic cloves and the bunch of parsley.

    In a skillet over medium heat, heat the 4 tbsp of olive oil.

    Add the onions to the skillet and begin to sauté them until soft.

    Add the chopped parsley, garlic, and the juice of the two lemons to the mixture.

  5. 5

    Season with salt and pepper to taste.

    Add the 20 g of butter at the end to add gloss and smoothness.

  7. 7

    Continue cooking for a total of about 5 minutes until the onions look glossy and translucent.

  8. 8

    Pour the hot mojo directly over the previously cooked yuca (cassava) and serve immediately.

Notes

This mojo is also an excellent accompaniment for roasted pork. While the traditional Cuban recipe often uses sour orange, this version with lemon is a delicious and common alternative.
