Ingredients
- 400 g Cooked pinto beans (Rinsed and drained)
- 170 g Short-grain rice
- 1 Onion (Chopped)
- 1 cucharadita de postre colmada Flour (Optional; heaped)
- 1 cucharadita de café Sweet paprika
- Extra-virgin olive oil (A drizzle / a little, for sautéing the onion)
- Salt (To taste)
- Water (Enough to cover the beans and a little more; the rice will absorb quite a lot of liquid)
Steps
- 1
Heat a little extra-virgin olive oil in a pot. Add the chopped onion and sauté it until it begins to brown.
- 2
Add the heaped flour, if using, and toast it for 1–2 minutes, stirring.
- 3
Add the sweet paprika and stir immediately so it does not burn.
- 4
Add the cooked pinto beans, previously rinsed and drained. Stir to combine them with the sofrito.
- 5
Add salt to taste and enough water to cover the beans and a little more. Keep in mind that the rice will absorb quite a lot of liquid; adjust the water according to whether you prefer the stew thicker or more brothy.
- 6
When the liquid comes to a boil, add the short-grain rice.
- 7
Cook over medium heat for about 15 minutes, or until the rice is cooked.
- 8
Taste and adjust the salt if necessary. Let the stew rest for a good while before serving; it will be even tastier than when freshly made.
Notes
The flour is optional. The amount of water is not specified; add enough to cover the beans and a little more, bearing in mind that the rice will absorb liquid. The exact resting time is not specified.
