Ingredients
- 2 cup all-purpose flour
- 1 tsp baking soda
- 0.5 tsp salt
- 0.5 cup unsalted butter (melted and cooled)
- 0.75 cup brown sugar (packed)
- 1 egg (large, room temperature)
- 1 tsp vanilla extract
- 0.25 cup sour cream (or Greek yogurt)
- 3 bananas (very ripe, mashed (about 1.5 cups))
- 0.5 cup walnuts (chopped (optional))

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or non-stick spray, or line it with parchment paper for easy removal.

In a medium bowl, whisk together the 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt until well combined. Set aside.

In a large bowl, whisk the 1/2 cup of melted butter and 3/4 cup of packed brown sugar together until smooth.

Add the egg, 1 teaspoon of vanilla extract, and 1/4 cup of sour cream to the butter mixture. Whisk until the mixture is fully incorporated and smooth.

Stir in the 3 mashed bananas using a spatula until just combined.

Gently fold the dry ingredients into the wet ingredients using a spatula. Mix until just combined and no streaks of flour remain; do not overmix, as this will result in a tough bread.

If using, fold in the 1/2 cup of chopped walnuts.

Notes
For the best flavor, use bananas that are heavily spotted or even completely black. If the bread starts to brown too quickly in the oven, you can tent it loosely with aluminum foil for the last 15 minutes of baking. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
