Ingredients
- 12 Medjool dates (pitted and flattened)
- 0.5 cup Peanut butter (smooth or crunchy)
- 100 g Dark chocolate (melted)
Steps
- 1
Line a small baking sheet or plate with parchment paper.
- 2
Slice the Medjool dates open and remove the pits if necessary. Place them close together on the parchment paper, then press down firmly with the bottom of a glass or your hand to flatten them into a single, cohesive layer.
- 3
Spread the peanut butter evenly over the top of the flattened date layer.
- 4
Melt the dark chocolate in the microwave in 30-second intervals or using a double boiler until smooth.
- 5
Pour the melted dark chocolate over the peanut butter layer and spread it to the edges to seal everything in.
- 6
Place the bark in the freezer for at least 60 minutes, or until the chocolate is completely firm.
- 7
Once set, break or chop the bark into bite-sized pieces. Store in the freezer or refrigerator.
Notes
For extra texture, you can sprinkle sea salt or crushed peanuts over the melted chocolate before freezing. This recipe is highly customizable based on the number of dates you have on hand.
