A comforting and delicious Korean noodle soup inspired by the BTS Recipe Book 1, as seen with Jin and Jung Kook. This dish features thin wheat noodles in a light, savory broth.

Ingredients

  • 200 g Somyeon (thin wheat noodles)
  • 10 Dried anchovies (large, guts removed for broth)
  • 1 piece Dried kelp (Dashima) (about 2x2 inches)
  • 6 cup Water (for broth)
  • 1 tbsp Soy sauce
  • Salt (to taste)
  • 0.25 Zucchini (julienned)
  • 1 Egg (beaten and fried into a thin garnish (jidan))
  • 0.25 cup Kimchi (finely chopped for topping)
  • 1 Green onion (sliced)

Steps

    In a large pot, combine 6 cups of water, dried anchovies, and dried kelp. Bring to a boil, then reduce heat and simmer for 15 minutes to create the broth base.

    Remove the anchovies and kelp from the broth. Season the liquid with soy sauce and salt to taste. Keep the broth simmering on low.

    In a separate pot of boiling water, add the somyeon noodles and boil for 3 minutes.

    Immediately drain the noodles and rinse them thoroughly under cold running water to remove excess starch and stop the cooking process.

    Briefly blanch the julienned zucchini in the hot broth or sauté in a pan until just tender.

    Place a serving of the cold noodles into a deep bowl.

    Pour the hot broth over the noodles.

    Garnish with the julienned zucchini, fried egg strips, chopped kimchi, and sliced green onions before serving.

Notes

The recipe is inspired by the BTS Recipe Book 1 and the members' cooking segments in 'In The Soop'. For an authentic touch mentioned by Jin, ensure the noodles are rinsed well in cold water to maintain their chewy texture.
