Ingredients
- 3 rice paper wrappers (rice paper)
- 1 large egg (beaten)
- 2 tbsp water (for the egg wash)
- salt (a pinch)
- 2 fetas cheese (Tybo or Danbo type)
- 2 chickpea and vegetable patties (pre-cooked or ready to cook)
- caramelized onion (to taste)
- sesame seeds (for sprinkling)
Steps
- 1
In a shallow dish or bowl, whisk the egg with 2 tbsp of water and a pinch of salt.
- 2
Soak the 3 rice paper wrappers in the beaten egg mixture until they are flexible.
- 3
Arrange the overlapping wrappers inside a small bowl, letting the edges hang over so you can close the parcel later.
- 4
Place a cheese slice at the bottom, followed by a chickpea patty and a portion of caramelized onion.
- 5
Repeat the layer by adding the second cheese slice, the second patty, and more caramelized onion.
- 6
Fold the edges of the rice paper wrappers over the filling, sealing the parcel well.
- 7
Sprinkle the top with sesame seeds.
- 8
Cook in the air fryer at 180°C-200°C (360°F-400°F) until the surface is golden brown and feels crunchy to the touch.
Notes
It's important to hydrate the wrappers well so they don't break when folding them. If you don't have an air fryer, you can try making them in a very hot oven or in a pan with a little oil, although the final texture may vary.
